Knead together 500 g flour with 1 egg, 50 g sugar, 50 g lard, 2 tablespoons cocoa powder, 1 glass of Marsala and 1 pinch of salt. Leave to stand for about two hours, then roll out the dough and cut into circles of about 10 cm in diameter. Brush one side of the circles with egg, roll onto "cannoli" moulds and fry in boiling hot oil (cannoli shells ready for use in various sizes are also available on the market).

Cool, ease out of the moulds and fill with cream filling made by combining 500 g sheep's milk ricotta cheese, 250 g sugar, 50 g chocolate drops and 50 g candied sicilian pumpkin, also called "zuccata" or "cucuzzata", diced. Decorate one end of each cannolo with a candied glaci cherry and the other with a slice of candied orange. Dust with icing sugar.
